Functional milk compounds
Milk and colostrum contain a great number of bioactive components influencing the human health e.g. weight management and hypertension. Furthermore, milk components, such as calcium and proteins, and novel structures created through processing of these under various conditions, have a great influence on the technological properties of milk, and also affect digestion and health properties of milk.
This course will give an overview of milk components with the focus on milk proteins and related novel dairy structures. The technological as well as the health aspects related to these components will be discussed in details. The participants will also be provided an up-to-date knowledge of the analysis methods used within this area. Furthermore, representatives from industry will give their perspectives on these components.
Aim
The course is directed to PhD-students and persons working with milk and milk compounds. The course will provide essential knowledge related to both technological and health functionalities of these components and give insight to advanced analytical methods used to study these structures.

Practical details
Date: August 30th - September 3rd, 2010
Venue: University of Copenhagen, Faculty of Life Science, Dept. of Food Science, Rolighedsvej 30, DK-1958 Frederiksberg C - classroom to be announced.
Teaching form: Lectures, exercises and participant´s presentations. PhD-students should study the course literature in advance and prepare a 5-10 min. presentation of their own project.
Assignment: After the course PhD-students need to prepare a written report reflecting subjects of the course related to their own project.
